Halibut poached in olive oil
ingredients
- 1 lb halibut filet, cut into 1 1/4" pieces
- sea salt
- fresh ground pepper
- 4 tbl extra virgin olive oil
- 1 small rosemary sprig
- 4 leaves fresh basil, thyme, or mint
- 2 garlic cloves, sliced
- fresh lemon juice

Season fish with salt and pepper.

In a medium size skillet just large enough to hold fish in single layer, heat oil over LOW heat. add herbs and garlic. keep heat low enough so as to infuse it with herbs. do not brown garlic. may be done ahead of time. when ready, add fish. keep heat LOW so as to gently poach fish. cook until done 4-6 minutes. squeeze lemon juice over dish and serve.
notes
any fish will work. the trick is to keep the heat low so as not to fry fish. good with polenta and fresh tomato sauce
