Zucchini & Feta Salad
ingredients
- 500g baby zucchini (or about 4 large zucchini)
- 5 green onions, finely chopped
- 100g feta, cubed
- Dressing:
- 160 ml extra virgin olive oil
- juice of one lemon
- 1 tsp. Dijon mustard
- 1 tsp. black pepper
directions
Bring salt water to a boil, then boil whole zucchini for 8-10 minutes. Drain and cube the zucchini. Place zucchini in a dish with the onion and feta. Whisk dressing ingredients and pour over dish. Toss gently to combine.
