Linguini with Clams
ingredients
- Olive oil
- 3-4 cloves garlic- minced
- 2 shallots- minced
- 2 cans chopped clams
- 1 bottle clam juice
- 1/2 c. white wine
- 2 tbsp. lemon juice
- 1 lb. linguine
- 1 c. fresh parsley- chopped
- parmesan cheese

In large frying pan, add 2-3 tbsp. olive oil. Add garlic and shallots and sauté, being careful not to burn.

Add clams with liquid, clam juice, wine and lemon juice. Cook until reduced, 10- 15 minutes.

Pour over cooked and drained linguini and top with fresh parsley and parmesan cheese.
