Stuffed Mushrooms
ingredients
- 1 pkg. (at least 1 lb) large mushrooms
- 1 lg. onion, chopped
- 1/2 green pepper, chopped
- 1 clove garlic, minced
- 1 tbsp. oregano
- 1 tbsp. parsley
- Dash of pepper
- 3/4 stick of margarine
- 3 tbsp. grated Italian cheese
- 1/2 cup of finely crushed bread crumbs
- 1 cup chicken broth

1. Clean mushroom caps, remove and dice stems.

2. Sauté diced stems, onion, green pepper and garlic in margarine until soft.

3. Add to breadcrumbs and cheese. Mix well.

4. Add parsley, oregano and pepper. Mix well.

5. Add small amounts of the broth until moist.

6. Stuff mushroom caps.

7. Place in baking dish. Cover bottom of dish with remaining chicken broth.

8. Bake uncovered for 25-30 minutes at 350 degrees. Baste several times using broth from bottom of the dish.
