Curried Shrimp
ingredients
- 1 pound (raw) frozen shrimp
- Unsalted butter
- 1 yellow onion, diced
- 1 clove garlic, minced
- 2 t ginger, minced
- 2 t curry powder
- 1 can of coconut milk
- Salt and pepper
- Rice, to serve

Cook the shrimp in a large saute pan until they are pink (2 or 3 minutes each side). Remove shrimp from pan and set aside.

In the same pan, melt a pat of butter and cook onion and ginger. When the onion is translucent, add curry, garlic, coconut milk, salt and pepper.

Add the shrimp back to the pan and cook for 5 to 15 minutes, until the sauce is thickened.

Serve with rice.
