Hummus
ingredients
- 1 clove garlic
- 1 (15 ounce) can chickpeas (also called garbanzo beans), rinsed and drained
- 1 1/2 tablespoons tahini (sesame paste)
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1/2 teaspoon ground cumin
- 1 teaspoon lemon juice
- 6-8 tablespoons olive oil
- 2-3 tablespoons water

With the food processor running, drop the clove of garlic through the feed tube and process until garlic stops moving around; scrape down the sides of the bowl. Add chickpeas, tahini, salt, pepper, cumin, lemon juice, and 2 tablespoons of the olive oil. Process mixture until a paste forms. Scrape down the sides of the bowl.

With the motor running, add another 2 tablespoons of olive oil in a thin steady stream, then add 1 tablespoon of water, and continue to process until mixture loosens. Repeat with another 2 tablespoons of olive oil and 1 tablespoon of water, and process for 1 full minute, until mixture is very smooth. For a looser hummus, add a little more olive oil and water.

Serve at room temperature with warm pita bread, or as a dip with fresh vegetables
