Very tasty green curry - add any vegetables you like! Especially good with Thai basil and Thai eggplant from the garden.

ingredients

  • 1 can coconut milk
  • 1 tsp fish sauce
  • 3 Tbsp green curry paste (or more, to taste)
  • 1/4 cup sugar
  • 1/2 cup Thai basil (or sweet if necessary), chiffonaded
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 package frozen green peas
  • 2 cups cooked skinless, boneless, chopped or shredded chicken

directions

Add all items and heat through. Serve over basmati rice.
