chicken panini
to die for chicken sandwich
ingredients
crust- 10 oz can of pizza crust
- 1/2 tsp. dried thyme
- 1/2 tsp. dried marjoram
- 5 oz. frozen spinach, thawed and drained
- 1/2 cup reduced-fat mayo
- 1/2 tsp. garlic powder
- 1 Tbsp. olive oil
- 1 cup red onion chopped
- 1 Tbsp. sugar
- 1 Tbsp. apple cider vinegar
- 2 precooked chicken breast sliced
- 4 slices muenster cheese

preheat oven to 375 degrees.

unroll pizza dough and place in a ungreased jelly roll pan. press dough until it reaches the edge of the pan

spray dough with cooking spray and sprinkle with dried thyme and marjoram.

bake for 10 minutes until lightly brown. cool completely.

in a small bowl, combine spinach, mayo and garlic powder. mix well and refrigerate.

in a saucepan, heat 1 Tbsp. olive oil over medium heat. add onions and cook for 2-3 minutes until tender. add sugar and vinegar, and then reduce heat to low. simmer this mixture for 3-5 minutes or until most of liquid is absorbed.

slice chicken and add to onion mixture.

cut cooled pizza into 8 rectangles. remove rectangles from pan. spread the unseasoned side of each with 2 Tbsp. of the mayo mixture and chicken/onion mixture. top with cheese and remaining crust season side up.

heat a griddle over medium heat and place sandwiches on it. place a foil wrapped brick on top or a heavy skillet on top of the sandwiches.

cook 4-6 minutes or until crisp. turn sandwiches after about 3 minutes. cut each sandwich in to half to serve
