MEXICAN (JALAPENO) CORN MUFFINS
These muffins are always a big hit no matter where you take them.
ingredients
- 1 cup yellow corn meal
- 1/2 cup all purpose flour
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. sugar
- 1 cup canned cream style corn
- 1 med. onion, chopped
- 2 or more jalapeno chili peppers,
- seeded and chopped
- 1/4 lb. sharp cheddar cheese (shredded)
- 1/2 cup vegetable oil
- 2 eggs, slightly beaten
- 1 cup buttermilk

Preheat oven to 450. Grease and heat muffin pan when mixture is ready.

In mixing bowl, mix four dry ingredients. Combine remaining ingredients, add to dry ingredients, and stir only until dry ingredients are moistened. Pour into muffin pan. Bake 15-20 minutes or until lightly browned.
