Cauliflower and Spinach Soup
So creamy yet so healthy! This soup is packed with nutrients for your growing family.
ingredients
- 2 heads of fresh Cauliflower, washed and broken into large chunks
- 1 pound fresh Baby Spinach, washed
- 1 Onion, chopped
- 4 Garlic Cloves, chopped
- 2 tablespoons Curry Powder
- Salt and Pepper to taste
- Olive oil for sauteeing
- Water

In large soup pot, saute onions and garlic in olive oil until translucent.

Add in the cauliflower and spinach, then fill 3/4 of the pot with water. Allow to boil until cauliflower is soft.

Allow to cool 1 hour. In small batches, puree the soup in a blender until smooth. Season with curry, salt, and pepper.
