Mom's Chicken Salad

- 1 hr to chill; all day to cook chicken; 30 minutes to put together

- 12 hr 30 minutes
ingredients
- 6 C of cooked chicken (cook in crockpot all day)
- 1 1/4 C sliced celery
- 8 oz can pineapple tidbits drained
- 1 1/4 C mayo.
- 2 1/2 tblsp. white cooking wine
- 3/4 tsp. salt
- 2 red delicious apples sliced
- 1 cantaloupe thinly sauced
- 1/2 lbs green grapes
- 1 pint strawberries
- lettuce leaves
- (other fruits can be substituted for the last 4)

Combine first 3 ingredients in a large bowl. Set aside.

Combine mayo. and next 2 ingredients. Add to chicken mixture tossing to coat. Cover and refrigerate 1-2 hours.

Arrange apples and next 3 ingredients on lettuce lines plates; top with chicken mixture.
notes
Cook a whole chicken (clean out first) in crock pot. Cover with water. Cook on low all day. Serve with refrigerated then cooked biscuits. Serve with butter mixed with some honey.
