Irish Tea Scones
From Sally O’Brian, Spanish teacher at RES and RJH. This is a family recipe from Ireland.
ingredients
- 3 C flour
- 2 1/2 t baking powder
- 1/2 C sugar
- 1 t salt
- 3/4 C butter
- 1 C raisins
- 1 C buttermilk
- 1/4 C light cream
directions

In a bowl, combine flour, baking powder, sugar, soda, and salt. Add butter into mixture until it resembles course meal. Add currants or raisins.

Gradually, add the buttermilk and mix until dough clings together. Do not over mix!

Turn dough out onto a lightly floured board. Divide in two and flatten each to a 1" thick rectangle. Cut the rectangle in half and then cut into 8 triangles.

Place on a buttered baking sheet.

Brush tops with cream and sprinkle with sugar.

Bake at 400 degrees for 15-20 minutes.
