Chili Espresso Rub
The earthy, sweet hot flavors of this unusual but fabulous rub are great for meat, especially pork or beef. Use mild or hot chili according to taste.
ingredients
- 2 Tbs dark brown sugar
- 1 Tbs ground espresso coffee
- 1 Tbs ground corriander
- 2 tsp ground cumin
- 1 tsp ground ginger
- 1-2 tsp dried chili flakes or powder
- salt and pepper

Mix all ingredients together in a small bowl until combined.

Rub mixture thoroughly into meat, poultry, fish, or seafood up to 6 hours before cooking.
