This is my take on Ina’s Roasted Pears and Blue Cheese. I have made this again and again I loved it so much! My husband loves it to!

ingredients

  • 3 ripe but firm Anjou pears
  • freshly squeezed lemon juice(3 lemons)
  • 3 onces crumbled blue cheese
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/2 cup apple juice
  • 3 tablespoons balsamic vineger
  • 1/3 cup light brown sugar,lightly packed
  • 1/4 cup olive oil
  • 6 onces ice berg lettuce
  • salt

directions

    Pre-heat oven to 375° degrees F.

    Peel the pears and slice them lengthwise into halves. With a melon baller and paring knife, remove the core and make room for the filling. Trim away a small slice from the bottom so they will in the baking dish without wobbling. Toss pears with lemon juice to keep them from turning brown. Arrange in baking dish core side up. Gently toss blue chesse,cranberries,pecans mounding on top of the pears. Combine apple juice,brown sugar,and basalmic vineger stiring to disolve the sugar. Pour the mixture over the pears and bake for basting occasionally for 39 minutes and let cool. Just befor serving wisk togather olive oil and lemon juice and

    divide the lettuce among six plates and

    drizzle the basting liquid over each add the pears. sprinkle with salt, and serve.

notes

You can use any lettuce you like or have on hand. Ina used arugala. Romaine works well too! She used kosher salt and port, also cider. I see if I can make this with less expensive ingridients why not! Just use what you already have on hand when possible.
