Black Bean Salad
ingredients
- 1 can of corn
- 2 15 oz cans of black beans, rinsed and drained
- 4 tbls of lime juice
- 2 tbls red wine vinegar
- 1 tsp of salt
- 1/2 tsp pepper
- 2 large tomatoes, seeded and chopped
- 3 jalapeno peppers, seeded and chopped
- 1 small red onion
- 1 avocado
- 1/4 cup chopped cilantro
directions
Whisk together liquids with salt and pepper. Add remaining ingredients and toss. Cover and chill for 2 hours and serve with tortilla chips. Great Appetizer!
