Sweet & Sour Chicken

ingredients

  • 1 tbsp peanut oil
  • 1/2 tsp salt
  • 2 cups diced chicken
  • 1 large onion
  • 1 green pepper in 1 inch cubes
  • 1 large tomato peeled, seeded, in cubes
  • sauce:
  • 1/2 cup sugar
  • 1/3 cup ketchup
  • 2 tbsp cornstarch combined with 1/3 cup cold water
  • 1 14oz can pineapple chunks, drained with liquid reserved
  • 1/3 cup cider vinegar
  • 1/2 tsp garlic powder

directions

  • 1

    heat wok, add peanut oil and salt.

  • 2

    add chicken, onion, pepper and stir until chicken is white.

  • 3

    add the tomato, stir gently for 1 min.

  • 4

    add sweet and sour sauce, serve over hot rice

  • 5

    sauce: mix all except pineapple chunks and cornstarch mixture.

  • 6

    bring to a boil, stir cornstarch paste until thickened.

  • 7

    add pineapple chunks just before serving.
