ROASTED TOMATO BASIL SOUP
Pair this delicious and hearty soup with a grilled cheese sandwich as a classic pair.
ingredients
- 3 pounds ripe plum tomatoes, cut in half
- 1/4 cup plus 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 1/2 tsp black pepper
- 2 cups onions
- 6 garlic cloves minced
- 2 tbsp unsalted butter
- 1/4 tsp crushed red pepper flakes
- 1 28 oz canned plum tomatoes, with juice
- 4 cups fresh basil = 2 bunches
- 1 tsp fresh thyme leaves
- 1 quart chicken stock or water = 2 cups
- Preheat oven 400 degrees

Toss tomatoes and olive oil + salt + pepper

Roast 45 minutes

In pot heat some oil, sauté onions + garlic + butter + pepper flakes 10 minutes

Add can of tomatoes + basil + thyme + broth + roasted tomatoes + their juice

Bring to boil, simmer uncovered for 40 minutes

Pass through food mill
