ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 3-4 ounces of jarred roasted red bell peppers drained
  • 1/4 cup tahini paste
  • 1/4 cup lemon juice
  • 1 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • pinch cayenne pepper (optional to taste)
  • 1 teaspoon ground cumin
  • 2 cups canned garbanzo beans, rinsed and drained
  • 1/4 cup water
  • 1/4 teaspoon paprika
  • pita chips

    Heat 1 tbsp of olive oil in a non-stick pan, on medium-low heat. Add garlic and lightly saute for 2-3 minutes. Be careful not to burn the garlic. Remove from heat.

    In a food processor, add the sauteed garlic, roasted red bell peppers, tahini paste, lemon juice,salt, black pepper, cayenne pepper and cumin. Blend until smooth.

    Add the garbanzo beans and water to the food processor and blend with the ingredients from paragraph 2. Blend until smooth (or whatever consistency you prefer). Add more water if needed.

    Pour the hummus into a serving bowl. Sprinkle the top with paprika and drizzle 1 tbsp of olive oil on top as well. Serve with pita chips.
