Mahi Mahi with Mango Salsa
This is a wonderful summertime recipe that can be made with any fresh catch. Often times I will make it with Yellowtail Snapper or Tilapia.
ingredients
- 1.5 pounds Mahi Mahi fillets
- 1/2 cup soy sauce
- 1/2 cup pineapple juice
- 1/2 cup sake or merin
- 2 tbsp sesame oil
- 2 tbsp lime juice
- 2 tbsp minced ginger
- 1 tbsp red pepper flakes
- 2 tbsp lemon grass, minced
- Mango Salsa

Combine all ingredients, except fillets, in a shallow glass baking dish. Add the fish and marinate in the refrigerator 3-4 hours, turning after 2 hours.

Preheat oven to 400°F. Place the fish in a greased baking pan and pour excess marinade over the fish. Bake for 12 minutes or until center of the fish is opaque and flakes easily. Serve on warm plates with Mango Salsa.

I like to accompany this dish with a Sweet Potato mash & zucchini lightly dusted with sesame oil & seeds then grilled.
