Tomato Basil Bacon Tartlets
This is a great dish to bring to a cocktail party - people will inhale them, and it looks like you worked harder than you did.
ingredients
- 1 package real bacon bits
- 1/4-1/2 c mayonnaise
- 1-2 chopped tomatoes
- 3 t fresh basil, chopped
- 1/2 onion, minced
- 1 16-oz can refrigerated biscuit dough (not the large kind)
- 3 oz Monterey Jack cheese
- Grated parmesan to sprinkle

Preheat oven to 375 degrees. Lightly grease 2 mini muffin pans – if you use butter, they will brown nicely.

Mix bacon, tomato, onion, cheese, mayo and basil in medium bowl.

Separate biscuits into halves horizontally. (If they are large, I use a biscuit cutter or even an upside down glass.) Press biscuit halves into muffin tins (see photo).

Fill each biscuit “cup” with tomato mixture. Sprinkle with parmesan.

Bake for 10-12 minutes or until golden brown.
