Flax Banana Bread
ingredients
- 1 1/4 cup all purpose flour
- 3/4 cup ground flaxseed
- 2/3 cup white sugar
- 2 tsp baking soda
- 1/4 tsp salt
- 2 Tbs egg replacer, mixed in 6 Tbs water
- 1/4 cup soy milk
- 1/4 cup canola oil
- 2 large bananas, very ripe, mashed
- 1/2 tsp vanilla ext.
- 1/3 cup chopped walnuts
directions
Heat oven to 350°. In large bowl mix flour, flax, sugar, baking powder, and salt together. In separate bowl mix banana, egg replacer, milk, oil, and vanilla. Pour wet ingredients over dry and combine. Fold in nuts. Lubricate a loaf pan and pour in batter. Bake 50-55 minutes. Inserted toothpick should come out clean. Let cool in pan 15 minutes then unmold and let cool completely on a rack.
