Out of Control Shrimp in a Skillet
This is one of my all-time favorite recipes. It tastes so much better than you might imagine from the ingredients- it is off the hook. And it is easy. Try it! You’ll like it! xoox Cat
ingredients
- 1/2 cup olive oil
- 4 cloves garlic, crushed
- 1/2 teaspoon crushed red pepper flakes
- 3 cups chopped tomatoes
- 1/4 chopped parsley
- 1 1/2 pounds medium shrimp, peeled
- 1/3 cup grated asiago or Swiss-like cheese
- 3/4 cup grated feta
- 1/2 cup finely chopped red onion
- 1/2 green pepper, chopped
- 1 1/2 teaspoon mustard
- 1/4 cup chopped mint
- salt and pepper

In a large skillet, heat the oil and cook the onion, garlic and peppers, stirring often, for 5 minutes or until soft.

Add crushed pepper and mustard and cook 1 more minute.

Add tomatoes and simmer 5 minutes.

Stir in mint, parsley, salt and pepper. Simmer for 5 minutes.

Add the shrimp and both cheeses. Cook over medium heat for 3 minutes or until the shrimp are cooked through and the cheese has melted.

Serve that shite over rice, or with a delicious, crusty baguette.
