Mat's Morning Dahl-ing
ingredients
- 1 cup red lentils
- 3 cups water
- 1 red onion, diced
- 1 tin chopped tomatoes
- 1 shaved protrusion of ginger
- 1/2 tin kidney beans
- 2 tbs. mango chutney
- 2 tsp. garam masala (curry powder)
- 2 tsp. ground coriander
- 1 tsp. chilli powder
- 2 tsp. vegetable stock
- 1/2 lemon

Chuck the lentils and water into a pan and bring to the boil.

All that foamy stuff that forms on the top....scrape that off and chuck it, not nice.

Meanwhile, whack the onion and ginger in a frying pan with some oil.

Cook until it goes a bit soft.

Add the arsenal of spices listed above, letting them infuse with the onion.

Add the kidney beans and keep stirring. After a while the lentils should be starting to soak up all that water. When the mixture gets pretty thick, chuck in the contents of the frying pan.

Whack in the tomatoes.

Get stirring.

Add the mango chutney, squeeze in the lemon juice, add salt to taste.

Serve up with rice or naan bread.
