Simple Herb Risotto
ingredients
- 1 tablespoon olive oil
- 1 yellow onion, peeled and diced
- I cup Arborio rice
- 1 cup dry white wine
- 3-3 1/2 cups chicken broth, warmed
- Salt and freshly ground pepper, to taste
- 2/3 cup grated Parmigiano- Reggiano cheese 3-4 Tbs. unsalted butter, softened
- 1/4 cup finely chopped fresh herbs, such as basil, oregano, rosemary and parsley

In a sauté pan over medium heat, warm the olive oil. Add onion and sauté, stirring, until translucent, 3-4 minutes.

Add rice and saute, stirring constantly, until kernels are translucent, 3-4 minutes. Add wine and cook, stirring, until rice absorbs liquid, about 2 minutes. Reduce heat to medium-low, add broth 1/2 cup at a time and cook, stirring constantly to prevent rice from sticking. Continue cooking, adding broth and stirring mixture, until rice is tender but firm to the bite, 20-25 minutes.

Add salt, pepper, cheese, butter and herbs; stir until risotto is smooth and creamy.

Serve immediately in warmed bowls.
