LEMON BLUEBERRY WALNUT BREAD
ingredients
- 1 cup walnuts, chopped (toasted)
- 2 cup flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup sugar
- 2 tbsp. lemon zest, finely grated
- 1/4 cup buttermilk
- 2 eggs
- 1 tsp. pure vanilla extract
- 2 tbsp. melted butter
- 2 tbsp. canola oil
- 1 cup frozen blueberries
- Glaze: 3 tbsp. sugar
- 2 tbsp. fresh lemon juice

Preheat oven 350°F. Mix dry ingredients

Mix wett ingredients. Do not overmix. Fold in walnuts and fruit

Bake 55 - 60 minutes. Cool 20 minutes

Bring glaze to boil. Pour over cake while still warm.

...if you any buttermilk left over - you can freeze it and use for another day
