Spicy Peanut Dip

Serve with raw vegetables as a dip. Use dip to coat noodles for an Asian-style noodle salad, or as a sauce for steamed vegetables.

ingredients

  • 2/3 C peanut butter
  • 1 T brown sugar
  • 1/4 C fresh lemon juice
  • 2/3 C prepared spicy hot salsa
  • 1/2 tsp ground cumin
  • salt to taste
  • Optional:
  • 2 tsp Worcestershire sauce
  • Tabasco or hot pepper sauce to taste

    Mash all ingredients together in a bowl, adding the optional ingredients for more zing or heat. Taste and add more lemon juice for more tartness. Stir well.

    Note: This dip keeps very well-- about 2 weeks covered and refrigerated-- so you may want to double the recipe to make sure there’s always some around for a quick snack or meal.
