Grilled Chicken in Marinade

ingredients

  • 1/3 cup soy sauce
  • 1 Tablespoon lime juice
  • 3 Tablespoons olive oil
  • 1 teaspoon thyme or other herbs
  • salt and pepper to taste
  • 1 1/2 pounds skinless chicken pieces (breast, thigh and/or drumsticks - with or without bone)

directions

Mix the marinade by whisking the first five ingredients. Marinate chicken in a mixture for one to six hours. Place on preheated grill (at medium heat) and cook 10 - 12 minutes per side for bone in and 6 minutes for boneless. Shred or cube any leftovers and use in salads, casseroles, and pasta dishes.
