Grilled Chicken in Marinade
ingredients
- 1/3 cup soy sauce
- 1 Tablespoon lime juice
- 3 Tablespoons olive oil
- 1 teaspoon thyme or other herbs
- salt and pepper to taste
- 1 1/2 pounds skinless chicken pieces (breast, thigh and/or drumsticks - with or without bone)
directions
Mix the marinade by whisking the first five ingredients. Marinate chicken in a mixture for one to six hours. Place on preheated grill (at medium heat) and cook 10 - 12 minutes per side for bone in and 6 minutes for boneless. Shred or cube any leftovers and use in salads, casseroles, and pasta dishes.
