Penne Vodka
ingredients
- 1/4 lb diced pancetta or prosciutto
- 1 lb penne
- 28 oz. can diced tomatoes
- 1 TBSP extra virgin olive oil
- 1 tsp chopped garlic
- 1 TBSP parsley
- 2 bay leaves
- 1 tsp red pepper flakes
- 1/4 cup vodka
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese

In sauce pan on stove top, saute pancetta in olive oil (about 3 minutes), add garlic and saute for one more minute.

Drain the juice out of the can of tomatoes and add the tomatoes, parsley, bay leaves, red pepper flakes and vodka to the pancetta.

Simmer on stove top until the sauce reduces and thickens, about 10 minutes.

In separate pot, cook the penne according to directions on box.

Drain pasta and set aside.

Take the bay leaves out of the pancetta/tomato sauce and add the heavy cream. Simmer on low for two minutes.

Mix pasta and sauce together, sprinkle with parmesan cheese and enjoy!
