chicken supreme
A great chicken recipe for a crowd. This recipe can be dressed up for a special occasion with special side dishes
ingredients
- 12 boneless chicken breast halves
- 1/4 cup of flour
- 2 1/2 tsp salt
- 1 tsp paprika
- 1 1/2 cup light cream
- 1/4 cup cooking sherry
- 1 tsp grated lemon peel
- 1 Tbsp lemon juice
- 1 cup shredded white cheddar cheese
- 1/2 cup chopped parsley for garnish
- 1/4 c butter
- 2 tsp corn starch

on waxed paper combine flour, salt, paprika.

Coat chicken.

In a lg skillet melt butter. Brown chicken on both sides. Add 1 cup of water and simmer until tender.

Place chicken in baking dish.

Mix cornstarch and 1/4 c of the cream. Stir into skillet drippings.

Cook over low adding remaining cream, sherry, lemon peel, and juice.

Cook until thickened. Pour over chicken.

Bake covered in 350 for 35 mins.

Uncover and sprinkle with cheese.

Bake until cheese melts, garnish with parsley.

Can be frozen for 1 week before use
