Greek Shrimp and Orzo
ingredients
- 1 1/4 cup orzo
- 1 small eggplant
- 1 medium red onion
- 2 carrots
- 3 Tbs olive oil
- 1 lb large shelled and deveined shrimp, thawed if frozen
- Salt and pepper
- 1 (5-6 oz) bag baby spinach
- 3/4 cup crumbled feta cheese

Cook orzo per package instructions.

Cut eggplant in 1/2" slices and quarter. Cut onion into thin wedges. Slice carrots diagonally.

Heat olive oil in large skillet over medium high heat. Add eggplant, onion and carrots, stirring occasionally, about 4 minutes until eggplant is almost tender.

Stir in shrimp, salt and pepper. Cover and cook 2-3 minutes until shrimp are cooked. Add spinach and stir until wilted. Serve over orzo and sprinkle with feta.

This goes together fast once the vegetables are prepared and leftovers reheat well.
