Spinach Salad

ingredients

  • Dressing:
  • 1 large clove garlic, cut in half 1 Tbsp. Lemon juice or wine vinegar
  • 3 Tbsp. Olive oil Salt, freshly ground pepper
  • Salad:
  • 2 qts spinach, washed and trimmed
  • 1 small red onion
  • 1/2 cup feta cheese, crumbled

directions

  • 1

    Combine garlic, olive oil, lemon juice or vinegar and salt and pepper, several hours before serving time and leave at room temperature. Before tossing with salad discard garlic.

  • 2

    Combine spinach, onion and feta cheese, pour dressing on top; toss and serve immediately.
