Western Meal In One Casserole
Great recipe for a quick, delicious meal. Serves 6-8
ingredients
- 1 lb. ground beef
- 1 T olive oil
- 1 clove garlic, minced (more)
- 1 chopped med. onion
- 1/2 green pepper, chopped (we don’t use)
- 1 t salt
- 1 t chili powder (more)
- 1 (16 oz.) can red beans, drained
- 2 cans diced tomatoes with juice
- 3/4 c uncooked rice
- 3/4 c grated cheddar cheese
- 1 small can sliced black olives
directions
Brown beef in oil with garlic. Add onion and pepper; cook until onion is transparent. Drain. Add the rest of the ingredients except for the cheese. Cook over low heat until rice is cooked. place in a 2 quart casserole and bake, covered, at 350 degrees for 30 minutes. Uncover and sprinkle with the cheese and bake for 15 minutes more.
