Beef Tenderloins with Bourbon
ingredients
- 8 beef tenderloins
- 2 tsp coarsely ground pepper
- 2 Tbsp vegetable oil
- 4 green onions, chopped
- 1/4 c bourbon
- 1/4 lb butter
- 2 Tbsp grated Parmesan
- 2 Tbsp grated Romano
- 1 clove garlic, minced
- 2 tsp sugar
- 1 tsp salt
- 1/4 tsp dried sage
- 1/4 tsp dried marjoram
- 1/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp paprika
- Dash of ground nutmeg
directions
Rub both sides of the tenderloins with pepper. Heat the oil in a large skillet and sauté the beef until done (5 minutes each side for medium rare). Transfer to serving platter and keep warm. Saute the onion in the same skillet for 1 minute. Lower the heat and slowly add the bourbon, scraping up the brown bits (yum yums) in the bottom of the skillet. Stir in the butter, cheese, garlic, sugar, salt, salt, marjoram, oregano, thyme, paprika, and nutmeg. Cook 2 minutes more. Pour the sauce over the tenderloins and serve immediately.
