Nick’s Stuffed Peppers
Nick saw a TV chef prepare these on a show several years ago. Nick, who would not eat a cooked vegetable to save his life, said that they looked good and he wanted to make them. Of course he omitted anything that he did not like (1/2 cup diced tomatoes). This recipe is Nick’s adaptation of the recipe. These make a fresh and light dinner.
ingredients
- 6 medium red, yellow or orange bell peppers
- 12 ounces ground turkey Italian flavored sausage
- 1 1/2 cups chopped onions
- 1/2 cup chopped celery
- 2 teaspoons minced garlic
- 1 1/2 cups cooked long-grain rice
- 1/2 teaspoon salt, plus more for seasoning
- 1/4 teaspoon freshly ground black pepper, plus more for seasoning
- 1/4 cup chopped green onions, green part only
- 1 tablespoon chopped parsley leaves
- 1/4 cup fine dry bread crumbs
- 1/4 cup grated Parmesan
- 2 tablespoons unsalted butter

These freeze beautifully. Make a bunch in the summer when the peppers are in season.
