Sausage Quiche
ingredients
- 1 lb pork sausage
- 1 onion, chopped
- 1 green pepper, chopped
- 2 Tb flour
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 (12-oz) can evaporated milk
- 3 eggs
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Swiss cheese
- 1 pie crust, unbaked

Preheat the oven to 400°. In a large saucepan, cook sausage and onion over medium heat, stirring to break up sausage, until pork is browned, about 5-7 minutes. Drain fat. Add bell pepper to saucepan; cook and stir for 1 minute longer.

Sprinkle with flour, salt, and pepper; cook and stir for 3 minutes. Add milk, cook and stir until thickened.

In large bowl, beat eggs until foamy. Stir sausage mixture into eggs. Sprinkle cheeses into pie crust and pour sausage mixture over. Bake for 25-35 minutes or until quiche is puffed, set, and top is beginning to brown.
