McQueen BBQ Pulled Pork
ingredients
- Dry Rub -
- 3 Tablespoons paprika
- 1 Tablespoon garlic powder
- 1 Tablespoon brown sugar
- 1 Tablespoon dried mustard
- 3 Tablespoon coarse sea salt (if you don’t have coarse sea salt just do about half with regular salt)
- 5-7 pork butt roast
- Cider-Vinegar BBQ Sauce -
- 1 can (12 oz) or Coca-Cola reduced by approximately half
- Once coca-cola has been reduced keep temperature at medium heat and add all the of the following ingredients to the pot.
- 1/4 - 1/2 cup of cider vinegar (depending on how strong of a cider taste you like)
- 1/2 cup yellow mustard
- 2 cups ketchup
- 1/2 cup brown sugar
- 2 garlic cloves, smashed
- 1 tsp. salt
- 1 tsp. cayenne pepper
- 1/2 tsp. fresh ground black pepper
- 1/4 cup of reduced pork drippings

Dry Rub: Mix all dry ingredients. Rub and massage into pork. Let sit for at least one hour. Place in crockpot on low. And cook for about 6 hours. Be sure to check it periodically since all crockpots cook so differently. You want it to be so tender that it falls apart easily. Once tender just shred pork and place back in crockpot.

Sauce:Once all these ingredients are added in, simmer for approximately 10 minutes to meld the flavors. Pour about 1/2 of the sauce on top of pulled bbq in crockpot and reserve remaining sauce to be served at table.
