Potato Pancakes

Great served with apple sauce or sour cream.

  • 4 or 5 large raw Potatoes

  • 2 Eggs

  • ⅓ cup Flour

  • 1 tsp. Salt

  • ¼ tsp. Pepper

  • 3 cloves Garlic, finely minced

  • 1 Tbl. Oil

  • Oil for frying.

  • Pare and shred or grate potatoes into bowl. Add eggs and garlic, mixing well. Add salt, pepper, flour and 1 tablespoon oil, mix well.

  • Heat a small amount of oil on griddle or frying skillet until hot. Drop potato mixture by heaping tablespoonfuls onto hot skillet. Fry until crisp and golden brown on underside. Turn; brown other side. Drain on paper towels.

notes:

Plan to fry pancakes as soon as mixture is made to prevent darkening.
