Potato Pancakes
Great served with apple sauce or sour cream.
ingredients
- 4 or 5 large raw Potatoes
- 2 Eggs
- 1/3 cup Flour
- 1 tsp. Salt
- 1/4 tsp. Pepper
- 3 cloves Garlic, finely minced
- 1 Tbl. Oil
- Oil for frying.

Pare and shred or grate potatoes into bowl. Add eggs and garlic, mixing well. Add salt, pepper, flour and 1 tablespoon oil, mix well.

Heat a small amount of oil on griddle or frying skillet until hot. Drop potato mixture by heaping tablespoonfuls onto hot skillet. Fry until crisp and golden brown on underside. Turn; brown other side. Drain on paper towels.
notes
Plan to fry pancakes as soon as mixture is made to prevent darkening.
