Three-Cheese Macaroni
ingredients
- 3 T butter or margarine, divided
- 1/4 cup all-purpose flour
- 1 quart milk
- 2 tsp dry mustard
- 3/4 tsp salt
- 1/8 tsp ground red pepper
- 1 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- 8 oz. elbow macaroni, cooked
- 1 cup soft bread crumbs
- 1 T chopped fresh parsley
directions
Melt 2 tablespoons butter in a large heavy saucepan over low heat; whisk in flour until smooth. Cook, whisking constantly, 1 minute. Gradually whisk in milk and next 3 ingredients; cook over medium heat, whisking constantly, until mixture is thickened and bubbly. Remove from heat, and whisk in cheeses until melted. Stir macaroni into cheese mixture, and spoon into a lightly greased 2-quart baking dish. Melt remaining 1 tablespoon butter in a glass bowl in microwave at high 30 seconds. Stir in bread crumbs and parsley. Sprinkle mixture over macaroni. Bake at 375° for 30 minutes or until top is lightly browned. Let stand 10 minutes.
