Potato Hedgehogs with Gorgonzola
Ricci di Patate al Gorgonzola
ingredients
- 200g. Boiled Potatoes
- 3 Eggs
- 80g. Gorgonzola
- 100g. Very Fine Angel-Hair Pasta
- 25g. Flour
- 1 Sprig of Parsley
- Extra-Virgin Olive Oil as Needed
- Nutmeg
directions
Mash the boiled potatoes and combine with one egg yolk, salt and nutmeg. Shape into small balls of preferred size and push inside a small piece of Gorgonzola. Roll the balls in the flour, the beaten egg and the crumbled angel-hair. Fry in very hot oil over a hot flame and serve on a napkin decorated with fried parsley sprigs.
