Citrus Thyme Scallops
ingredients
- 24 large scallops
- 3 tablespoons olive oil
- 1/2 tablespoon salt
- 1/2 tablespoon pepper
- 1/8 teaspoon cayenne pepper
- 2 tablespoons butter
- juice of 2 oranges
- juice of 1 lemon
- 1 tablespoon thyme
directions
Season washed and dried scallops. saute in butter and oil in batches, 1 to 2 minutes per side. Remove from pan once all have been cooked and pour in juices with thyme also releasing any brown bits from the bottom of the pan. Reheat scallops in sauce and serve immediately.
