ingredients

  • 2 c. sugar
  • 1 c. oil
  • 4 eggs, beaten
  • 2 c. can pumpkin
  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 c. chopped pecans, optional
  • Frosting
  • 1 (3 oz.) package cream cheese, softened at room temp.
  • 3/4 c. butter or margarine, softened at room temp.
  • 3 c. powdered sugar
  • 1 tsp. vanilla
  • 1 tsp. milk

    Combine (not including the frosting ingredients) and mix with a wooden spoon and pour into a jelly-roll pan that has been sprayed with Pam. Bake at 350 for 30 minutes.

    Beat at medium speed. Add milk until desired consistency for spreading. Spread over cooled cake.
