Coconut Shrimp Lollypops with Apricot- Giner Dipping Sauce

ingredients

  • Dipping Sauce:
  • 1/2 cup apricot jan
  • 1 tbsp freshly grated ginger
  • 1 tbsp Dijon mustard
  • 1 jalapeno pepper, seeded and minced
  • 1 tbsp rice wine vinegar or freshly squeezed lime juice
  • Coconut Shrimp Lollypops:
  • 2 cups sweetened shredded coconut
  • 1 cup of all-purpose flour
  • 1/2 cup beer
  • 3/4 tsp cayenne pepper
  • 1 egg
  • 12 shrimp, shelled and devined
  • 12 bamboo skewers
  • 4 cups peanut or vegatable oil
