Upside Down Pudding
ingredients
- 3 Tbs butter
- 1/2 cup brown sugar
- large canned fruit or chunked pineapple
- 1/3 cup sugar
- 1 egg
- 1 cup flour
- 1 tsp baking powder
- 1/2 cup milk
- 1 tsp vanilla
directions
In an 8 x 10 inch pan melt 3 Tbs butter. Over this spread brown sugar. Place on top of these canned fruit or pineapple. Then over all this pour a batter made of the following: 1/3 cup sugar and 1 egg; beat together till creamy. Measure 1 cup sifted flour and 1 tsp baking powder. Add to egg mixture with 1/2 cup milk. Beat well add 1 tsp vanilla. Bake 30 minutes in moderate oven. Turn upside down on plate. Serve with cream.
