Blueberry Muffins
These are light and fluffy muffins. They are especially delicious with fresh, plump blueberries!
ingredients
- 1 Egg
- 1 C. Milk
- 1/4 C. Vegetable Oil
- 2 C. Flour
- 1/4 C. Sugar
- 3 t. Baking Powder
- 1/2 t. Salt
- Blueberries

Combine dry ingredients and set aside. Grease or line with muffin cups a muffin pan. Beat together sugar, vegetable oil, and egg. Alternate adding the flour mixture and milk, beating on low-medium speed after each addition. Just mix until moistened. Carefully fold in the blueberries.

Bake at 400°F for 20-25 minutes.

Buy or pick blueberries when they are fresh in the summer. Freeze them, unwashed, in quart-sized Zip-loc Bags. When you are ready to make the muffins, rinse the blueberries in a collander carefully. This will defrost and wash them at the same time!
