Turkey Spinach Salad

This salad combines an interesting arrangement of fruits, onions, and vinaigrette’s for an unusually spectacular taste.

ingredients

  • 1/4 c red currant jelly (substitute and berry jelly flavor or jelly brand, as long as you use jelly and not jam.)
  • 3 tbsp red wine vinegar
  • 8 c fresh torn spinach leaves
  • 8 oz smoked turkey breast, cut into bite-sized pieces
  • 1 c strawberries, halved
  • 1 can (8 oz) mandarin orange sections, drained
  • 2 green onions, sliced

directions

    Combine jelly and vinegar in a small saucepan. Cook over a medium-low heat, stirring constantly, for 1-2 minutes until jelly is melted and smooth. Transfer to a small bowl.

    Chill in the freezer for 10 minutes

    Combine spinach, turkey, strawberries, oranges, and green onion in a large bowl. Drizzle chilled dressing over spinach mixture; toss well to coat.
