VEGETABLE DOLMA
An alternative to this traditional recipe is by using baby vegetables for more of an appetizer dish.
ingredients
- 1 Package of Ground Beef
- 1 Bunch of Cilantro
- 1 Bunch of Parsley
- 1 Green Onion
- 1 Leek
- 1 Fenugreek Leaves (Shambaleh-lee-leh)
- 1 Onion
- 1 Eggplant
- 1 Potato
- 1 Tomato
- Salt & Pepper

Dice the onion and fry with ground beef.

Finely chop the cilantro, parsley, green onions, leeks, and fenugreek leaves. Add to beef mixture.

Allow to cook through. Salt & pepper to taste.

Boil rice and mix into cooked meat. Add lemon juice.

Mix in tomato paste and water to 1/2 inch above meat.

Allow to boil. Once the water has evaporated, set aside.

Clean and core onions, eggplants, potato, tomato and squash.

Stuff the vegetables and allow to cook through.

Place in a pyrex and pour the cored vegetable conents over.

Allow to cook at 350 degrees for 45 minutes.
