Tomato Salad
Copy of Bucca Di Bepo’s tomato salad.
ingredients
- 8-12 Roma tomatoes, quartered
- 8-9 Basil leaves, juileened
- 1 lb. fresh mozzarella, sliced
- 1/2 a red onion, sliced and seperateded
- 1 medium cucumber, quartered and sliced
- extra virgin olive oil
- 1/3 lb. pepeoroni, chopped
- 1/3 lb. hard salami, chopped
- 1/3 lb. smoked ham, chopped
- 5 cloves garlic, finely chopped
- salt and pepper to taste
directions
Combine the chopped vegetables and meats. Add the basil, salt and pepper, and drizzle lightly with olive oil. Toss. Then add the sliced, fresh mozzarella and very gently toss again (mozzarella will break up). Add any salt and pepper if needed and serve at room temperature.
