ingredients

  • 3 eggs
  • 1c. applesauce
  • 1/2 c. canola oil
  • 1 Tbsp. vanilla
  • 2 c. grated zucchini (unpeeled)
  • 2 c. sugar
  • 2 c. all purpose flour
  • 1 1/2 c. baking soda
  • 1 Tbsp. cinnamon
  • 1 tsp. salt
  • 1/2 tsp. baking powder

directions

Preheat oven to 400 degrees. LIne 24 muffin cups with paper liners. In a medium bowl, combine eggs, oil, applesauce, zucchini, vanilla, and sugar then mix well. Add flour, baking soda, cinnamon, salt, and baking powder. Stir until moist. Batter will be thin. Fill muffin cups to about 2/3 full. Bake 15-18 minutes.
