Cilantro-Tequila Grilled Chicken
Everyone likes this marinade! I like an extra clove or 2 of garlic and don’t forget the jalapeño, it adds a nice zing.
ingredients
- 2 Bunches of cilantro leaves
- 5 Cloves of garlic
- 1 Shallot, rough chopped
- 1 T Minced jalapeno
- 1 T Toasted cumin seeds
- 1/4C Fresh lime juice
- 1/4C Tequila
- 1/2 t Pepper
- 1 t Salt
- 6 Pieces of chicken, thigh & legs
- Cilantro sprigs and lime wedges for garnish

Combine first 10 ingredients in a blender or processor and puree until smooth, stopping to scrape down sides. Place chicken and marinade in zip lock plastic bag. Marinate 2-4 hours, turning occasionally to coat.

Remove chicken and salt and pepper both sides. Grill as usual.
