Walleye - ala Lord Fletcher's

ingredients
Walleye:- 4 boneless Walleye Fillets
- Margarine
- Egg/Milk Wash
- Ritz Crackers, crumbled
- Lord Fletcher’s Herb Butter
- 1 stick each Butter and Margarine,melted
- 1 tsp. Shallots, finely chopped
- 1 tsp. Dill
- 1 tsp. Chives
- 1 tsp. Red Pepper Mix
- 1 tsp. Garlic
- 1/2 tsp. White Pepper
- 1/2 tsp. Salt
- and: 1 tsp. each any other preferred spices (oregano, basil, thyme, rosemary, etc.)

Melt margarine in fry pan to 350 degrees... DO NOT use butter.

Dip fillets into egg wash and then into Ritz Cracker crumbs.

Fry until golden brown, about 3 minutes per side.

Drizzle with melted herb butter.

Leftover Herb Butter can be frozen into individual servings and used as needed in other recipes.
